There seems to be some issue with e310 buttons not mapping like most PPCs. Has there been any work around? With MAMECE all I can play is pac man

I emailed the author about it but maybe someones created a utility to make the e310 buttons like other PPCs?

Because I've seen the source code, The best way to fix your problem is to recompile MameCE3 ALL with your buttons config. Everything is hardcoded for controls. And the support for GAPI is only 3 buttons... That why it's hardcoded... Even if it's not the best method. The project is really easy to compile and the code looks not so bad :P
