I'd go for the pragmatic option: if you don't trust them, no deal; walk away. Find a publisher that you do trust.

Its not unusual for a publisher to require source code for support purposes. ppcStudios makes that a requirement of all publishing deals. Our philosophy is that if something happens to the developer and we don't have the source code, we have no way of correcting potential bugs in the product. Also, if it is a Gapidraw based application (which most of our products are), we would require the full project to do a final, commercial build.

I agree with refractor 100% - if you don't trust the publisher, never give away your source code and start looking for a publisher you do trust.
