It's not that the copyright prohibits it. The problem is that the source code to the game isn't available to the public. If you nag LucasArts and get them to hand over the source code to either game then someone here will be happy to take a crack at it. Jedi Knights would probably run faster than Quake. If I recall it wasn't very graphically intensive.

Nah, just make little shortcuts for the Force powers like in Pocket Quake, or just scroll throught them. You could do the same with the weapons. Just remember-you could have a lightsaber in your pocket at all times.

One of the biggest performance issues with Quake is related to how far into the distance you can see. Obviously when you are in a large, open room, you can see further, thus more surfaces and edges are visible at once (assuming the room isn't just a big empty cube). Jedi Knight has a scale like I've never seen before in a FPS. Some of the levels allowed you to see vast distances, which certainly would hurt performance. So even though it may not have the detail of Quake, it makes up for it in scale.

(Most of it) comes down to number of polies, and the parts I remember in JK were wide open, but mostly 2 poly walls.
JK doesn't have a function like r_showtris though so I really can't say for sure.
Both games ran about the same speed on my P100.
The source is still closed, and with no chance of being opened, so that's another small problem.
