I looked at the source for windoom, which I believe is where you ported this. You could create new gamma tables in v_video.c. Or if you look at the PocketQuake source there is a function in view.c called BuildGammaTable that you could use to replace the static tables in Doom. Let me know if I can help.

Here's a simple update:

Left-handed support and bumped-up gamma.
No customisable lanscape keys and god-only knows what is going on with the PWADS. (Only had a quick look tho!)

Work ok?
