In simplest terms, there are avogadro's number, or a mole, of protons in a gram. So if you somehow had nothing but protons, you would need 6.022x10^23 of them to get a gram. A mole is like a dozen, in that it refers to a specific number, and nothing else. You therefore cannot say a mole equals a certain amount of grams.
